Fish Baked a la Russe
300 g fish (pike,cod, cat-fish, perch), 300 g potatoes boiled, for Sour cream sauce, 300 g sour cream, 20 g flour, 15 g oil, 60 g cheese, salt.
Grease a pan with fat, put sliced potatoes around and fish slices in the center, salt. Mix sour cream with oil and flour thoroughly and pour over. Sprinkle with cheese. And bake in the oven for 30-40 mins.

Fish Roll
600 g fish fillet, 2 ea white bread slices, 1 ea onion, 2 tb butter, 1 ea egg, salt, ground pepper, oil, parsley green.
Grind fish fillet with onion and soaked in milk bread in a mincer. Stir in a whipped egg, salt and pepper. Knead the mixture and shape a log. Put the log on a baking sheet sprinkled with breadcrumbs and bake in a preheated oven on average heat, pouring over sour cream regularly.

Fish in Deep-Fry
800 g fish, 2 tb flour, 1 ea egg, 1/2 c breadcrumbs, 200 g oil to fry, 1/2 ea lemon.
Slice fish, salt to taste, roll in flour soak in a beaten egg and roll in breadcrumbs. Heat oil in a pan, put fish and fry until light brown on both sides.

Fish Casserole
1 large onion, cut into 1/8-inch slices, 5 tablespoons unsalted butter, 4 pounds fish fillets, Salt to taste, 1/2 pound Marinated Mushrooms, 3/4 pound fresh or canned Morello (sour) cherries, pitted, 4 Brined Cucumbers, diced into 1/2-inch cubes, 1 cup canned pickle marinade, 3 tablespoons finely chopped parsley.
Saute onions over moderate heat in 2 tablespoons butter for 8-10 minutes, or until pale golden. Cut the fish fillets into 2 1/2- to 3-inch pieces and sprinkle with salt.
Set the baking rack at the top level of the oven (be sure you have room for the pot) and preheat the oven to 450F.
Grease a Dutch oven with 1 1/2 tablespoons butter and place the fish pieces on it. Sprinkle each layer with the mushrooms, cherries, pickles, and sauteed onions. Melt the remaining butter and dribble it over the fish.
Bake the fish, uncovered for 5 minutes. Pour the pickle marinade evenly all over the fish, cover, and place over moderately low heat on top of the stove. Simmer for about 15 minutes.
